Bilberries grown in our forests from mid-summer to the beginning of autumn. The cold winter and light but short summer of the North provides an excellent habitat for bilberries, making them extremely dense in nutrition and intense in flavor.
Bilberry contains vitamins C and E, and it is also a good source of dietary fibre. Bilberry also contains plenty of anthocyanin, four times the amount of what the highbush blueberry contains. The pulp of the bilberry is full of anthocyanins which give the berry its natural blue color, whereas the pulp of the highbush blueberry is pale in color. Anthocyanin is a flavonoid with powerful antioxidant effect. Antioxidants help to protect cells from the damage caused by sun exposure, pollution and aging, and thus are known for their anti-aging effect. Anthocyanin has also been discovered to reduce the risk of cardiovascular diseases, ophthalmopathy and cancer. In addition to anthocyanin, bilberries also contain protocyanin, flavonoids and tannins which function as antioxidants and may help to reduce inflammation.
