The wild herbs are collected when they are at their freshest after which they are preserved properly. Wild herb foraging

Finnish nature is the home to some of the world’s most purest and tastiest wild herbs. Especially our forests, the purest and cleanest in the world, are full of natural foods that can be used in many ways. Wild herb foraging is also a popular hobby for us Finns as we enjoy spending time in our calming forests. Wild herb foraging doesn’t cost anything and it keeps the kitchen cupboards full of delicious spices. The best time to head out to the forests to hunt some herbs is spring and early summer, as the nutrient level of the plants is at its highest then.

The use of wild herbs in seasoning

Wild herbs are perfect for everyday cooking. They are versatile to use and they contain a lot of important nutrients. Meat dishes get an extra kick from sage, thyme, lovage, parsley and lemon balm. Fish dishes are complemented by nettle, chives and lemon balm.

Other popular and unique Finnish herbs and their use include:

  • Birch leaves can be used in soups, stews and pies or sprinkled on top of salad or smoothie.
  • Nettle can be used like spinach. It is excellent in pies, pestos, stews and soups. It can also be used in smoothies.
  • Roseroot can be added to smoothies, porridge, yogurt and drinks.
  • Dandelion is a perfect addition to a green salad.
  • Yarrow has a slightly peppery taste which makes it a suitable spice with vegetables, fish, meat and barbecues.
  • Spruce tips with Greek yogurt make a nice dip for vegetables. They can also be used as a versatile condiment for main courses.

Remember that you can also use wild herbs to brew a nice cup of warm herbal tea!
