Every food culture that kept animals learned the same practical lesson: the useful parts did not stop at the meat. Simmer bones, joints and connective tissue in water and they produce a savoury liquid that can add body and flavour to meals. Nordic kitchens knew it, as did kitchens around the world, long before bone broth became a wellness category.
The modern revival has brought useful products and exaggerated claims in equal measure. This guide explains what bone broth can contain, why composition varies, how it differs from ordinary stock and how to compare a genuine broth product with a flavoured seasoning powder.
What is bone broth?
Bone broth is made by simmering animal bones, usually with joints or connective tissue and often vegetables and seasonings. During cooking, collagen from connective tissue can convert into gelatine, giving a concentrated broth body and allowing some broths to set when chilled.
Acidity, temperature, bone type, water ratio and cooking time all influence extraction. A small amount of vinegar is sometimes used, and controlled research indicates that lower pH and longer cooking can increase the extraction of some minerals. This does not mean that every long-cooked broth becomes a significant mineral source; the finished nutrition analysis remains the relevant measure.
Bone broth, stock and powder
There is no universally enforced culinary boundary between stock and bone broth. In practice, stock is usually made primarily as a cooking base, while products sold as bone broth are often cooked longer, use more connective tissue or are intended to be consumed as a drink as well as used in recipes.
Bone broth powder can be broth that has been concentrated and dried. It can also be a seasoning-led product using stock flavours, salt and other ingredients. Check the ingredient list and nutrition declaration rather than relying on the front-of-pack name.
What is actually in the pot?
The composition of bone broth varies widely between recipes and commercial products.
- Protein and gelatine. Products made with collagen-rich tissues can provide gelatine and protein. Compare grams of protein per serving.
- Amino acids. Glycine, proline, hydroxyproline and other amino acids can be present, but measured concentrations vary greatly. Research comparing broths found that they were not a consistently reliable substitute for the standardised collagen doses used in supplement studies.
- Minerals. Some calcium, magnesium and other minerals can move into the liquid, with acidity, cooking time and bone type affecting extraction. Broth should not be assumed to be a rich mineral source unless the finished product's analysis supports that conclusion.
- Fat, carbohydrate and sodium. These depend on skimming, vegetables, concentration and seasoning. Some broths are low in carbohydrate; many prepared products contain substantial sodium.
The claims, sorted carefully
Well supported as food: bone broth is a savoury source of fluid and, depending on the product, protein. It can replace an ordinary stock in cooking or provide a warm alternative to sweet drinks.
Plausible but not established for broth itself: gut, joint and skin claims are often based on the biological roles of collagen-related amino acids or on research using specific collagen supplements. Digestion breaks proteins down, and the amount delivered by a mug of broth is highly variable. Clinical evidence for broad health outcomes from ordinary bone-broth consumption remains limited.
Overreach: detoxification, disease treatment, “gut healing” and guaranteed anti-ageing claims. Bone broth is food, not a medical therapy.
Why sourcing and specification matter
Sourcing can matter for animal welfare, traceability and purchasing values, but labels such as grass-fed or organic do not tell you the protein, amino-acid or mineral content of the finished broth. Compare both the sourcing documentation and the nutrition panel.

How to use bone broth
As a warm drink
Heat liquid broth or prepare a powder according to its label. Season to taste, remembering that commercial products vary greatly in sodium. Ginger, pepper, herbs or chilli can add flavour without changing the basic use.

In the kitchen
Use bone broth wherever you would use stock: soups, stews, sauces, risotto, grains and braised vegetables. A gelatine-rich broth can add body when reduced. Homemade broth can be cooled promptly and frozen in practical portions.
In low-carbohydrate diets and fasting
Some unsweetened broths contain little carbohydrate, but the complete nutrition panel matters. Bone broth contains protein and energy and therefore breaks a strict zero-calorie fast. People may still choose it during a looser fasting routine, but that is a dietary preference rather than a universal definition of fasting.
Broth is not automatically an electrolyte product. Sodium can be high when salt is added, while potassium and magnesium amounts may be modest or undeclared. Anyone who needs medically guided electrolyte or sodium management should use the product information and professional advice rather than treating broth as a standardised replacement.
How to judge a broth product
- Read the first ingredients. Look for broth, bones or a clearly described broth concentrate rather than a list led by salt, flavourings or yeast extract.
- Check protein per serving. This is more useful than assuming a product is collagen-rich because of its name.
- Check sodium. Compare the amount per prepared serving, especially if you use the product daily.
- Look for transparent sourcing and processing. Named origin, certification and preparation details improve traceability when they are documented.
- Do not rely on the wobble alone. A chilled liquid broth that gels contains enough gelatine to set at that concentration, but a legitimate broth may remain liquid because of dilution, ingredients or processing. Powder cannot be judged until prepared, and even then concentration matters.
